What does an RD2Be eat?
Many of those who read my blog are also RD2Be, so these recipes might not be life-changing. That being said, I thought it would be fun for me to share what I'm eating every so often since I'm actually cooking now! I have an excess amount of time currently, so this series might end when the internship starts, but for right now operation meal planning is a go!
So what have I been eating? Well because it is heating up here in Michigan, I wanted cold food. How else am I supposed to enjoy my meal outside in my hammock? ;) I'm not experienced enough to create my own recipes, so I've been scouring the web for new and interesting things (that my boyfriend would probably sneer at, he isn't much of a foodie). I've included the recipes below, with a picture and credit from the website where I got it!
How did I meal plan? Well I looked for recipes that sounded interesting, picked out three to try for three nights, and then shopped for all my ingredients. I made a list of all the ingredients I needed (excluding things I knew I had like salt) and then double checked to make sure I didn't buy any excess (I was low on lime juice, so I picked up more). I also wrote down how much I needed -- a handy thing when you are at the grocery store and thinking, "I wrote tomatoes... but how many tomatoes do I need?" Especially if that ingredient is going to be in more than one recipe. I also wrote down if anything required prep the night before in my planner so I wouldn't forget. Then I grocery shopped on a mission, sticking to my list and only my list; if you're like me, you might pick up things here and there (croissants anyone??) increasing your grocery bill and buying too much food you can't finish before expiration. Then every night I devoted time to making the food! Some recipes are more time-consuming, so they might not be the most useful for you, but hey, maybe you can find a shortcut!
That's what I've been eating! I didn't exactly account for the fact that I'm only feeding me, so I've got a lot of quinoa salad now, but that's alright--easy lunches! :) I also substituted fresh green peppers in the quinoa salad, and I think that last salad would be SO good with goat cheese (didn't have any on hand this time, because, you know, everyone usually has that on hand?). I also tripled the last recipe because blueberries and lemon are a summer staple, y'all.
